Lean into the festive season and fix plans to catch up with friends and colleagues over a celebratory drink while raising a glass to getting through 2021 at one of our five favourite city establishments.

Famous for its house-made sodas, PS40 on Skittle Lane in the CBD is a Sydney institution. Choose from a range of wine, beer and cider, as well as a rotating list of cocktails. Basque Old-Fashioned is a heady brew of Bulleit bourbon and Pedro Ximenez sherry which successfully marries cocktail hour with dessert. More beguiling is the Breakfast Negroni, a buzzing spin on the classic cocktail which adds notes of coffee and tonka bean to the traditional gin-sweet vermouth-Campari triumvirate. Bar snacks include cheese plates and freshly baked flatbreads, one topped with LP’s chorizo, manchego and guindillas, and another with zucchini sofrito, feta and chives.
Continental Deli, Bar & Bistro
It’s a slice of Continental glamour in the heart of the CBD. Situated across from the Supreme Court is the Philip Street digs of much-loved outfit Continental Deli Bar & Bistro. For years, the Conti crew have charmed us with their predilection for canned seafood from the likes of Conservas de Cambados and La Belle Iloise and, of course, canned cocktails, specifically the Mar-Tinni and the Can-Hatten. The wine list celebrates producers in Australia and overseas, while a comprehensive list of sherry and vermouth reflects a fond regard for both. Beat the inevitable festive season weekend crowds and have a midweek meeting over a charcuterie plate and glass of the Continental’s finest.

Stumble down Council Place, a delivery lane off Clarence Street, and you’ll find yourself at Cantina OK!, a 20-person cocktail bar that brings the best of Mexico to the CBD. Specialising in premium agave spirits, Cantina OK! makes the meanest margarita in Sydney. Weekly specials and inspired collaborations keep things interesting – think Breakfast in Bogotá (tequila, fresh lime, guava, panela and bitters) or the Sinhalese Soda (San Luis Potosí mezcal, curry leaf and pineapple cordial, fresh lime and fizzy coconut water).
The Gidley
Retreat from the hectic shopping squish of the city streets to The Gidley, a warren-like subterranean establishment on King Street that dials up the opulence to eleven. Its velvet-lined booths and banquettes are the perfect setting for a long overdue tête-à-tête with friends. Drinks are pre-prepared and finished with a flourish at the table. Befitting an American-themed steakhouse, on the cocktail menu you’ll find stateside classics like the New York Sour, the Manhattan and the Spring Julep. Fuel up with The Gidley Burger, a satisfying offering featuring double beef patties, cheddar and house pickle, plus a side of fries and ranch dressing.
The Barrie
Perched on the city’s edge in Chippendale is The Barrie, a welcoming cocktail bar on Regent Street taking over where former tenant Freda’s left off. The Barrie is a late-night live music venue named after proprietor Chris Garner’s race car-driving grandfather. Garner, whose work credits include Employees Only, Spice Temple and Frankie’s Pizza, delivers a cocktail list that covers all bases, ranging from the smoky Big Raz to the sweet Monica Miles. Make The Barrie your venue of choice if you plan on taking your Christmas celebrations into the small hours of the morning.
