Chebakia Recipe For Ramadan

Another popular Moroccan Ramadan dish is Chebakia, which is a sweet and crispy pastry that is often served as a dessert during Ramadan. Here is a recipe for Chebakia:
4 cups all-purpose flour
1/4 cup sesame seeds
1/4 cup vegetable oil
1/4 cup melted butter
1 tsp salt
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground aniseed
1/4 tsp ground turmeric
1/4 cup honey
1/4 cup orange blossom water
Vegetable oil for frying
Powdered sugar for dusting

In a large bowl, mix together the flour, sesame seeds, vegetable oil, melted butter, salt, cinnamon, ginger, nutmeg, aniseed, and turmeric until well combined.
Gradually add enough water to the mixture to form a stiff dough.
Knead the dough on a lightly floured surface for 10-15 minutes until it is smooth and elastic.
Divide the dough into small balls and roll each ball into a thin sheet (about 1/8 inch thick).
Cut the sheets of dough into strips that are about 1 inch wide and 6 inches long.
Using a Chebakia mold or a sharp knife, make cuts along the length of each strip (not all the way through) to create a decorative shape.
Heat the vegetable oil in a large skillet or deep fryer over medium heat. Once the oil is hot, carefully place the Chebakia in the oil and fry until they are golden brown on both sides.
Remove the Chebakia from the oil and drain them on paper towels.
In a separate pot, heat the honey and orange blossom water over low heat until the honey is melted and the mixture is well combined.
Dip each Chebakia into the honey mixture, making sure it is well coated.
Arrange the Chebakia on a plate and sprinkle with powdered sugar.
Enjoy your delicious and sweet Moroccan Chebakia!
